Turkey Stew With Dumplings
- 2 Tbsp. margarine or butter
- 1 medium onion, sliced
- 2 ribs celery, sliced
- 3 c. chopped cooked turkey
- 2 c. coarsely chopped green cabbage
- 1 can (14 1/2 oz.) tomatoes (undrained), cut up
- 1 can (15 1/2 oz.) kidney beans (undrained)
- 2 cans (13 3/4 oz.) chicken broth
- 1 tsp. dried thyme leaves
- 1/2 tsp. salt
- 2 c. buttermilk baking mix
- 2/3 c. milk
- Melt margarine in large saucepan or Dutch oven over medium heat.
- Add onion and celery; cook, stirring occasionally, until crisp-tender.
- Add turkey, cabbage, tomatoes, beans, broth, thyme and salt.
- Bring to a boil over high heat.
- Reduce heat, cover and simmer 20 minutes or until cabbage is tender.
