Nacho Skillet Casserole
- 1 lb. ground beef (lean)
- 1 medium chopped onion
- 1/2 green pepper, chopped
- 1 tsp. sugar
- 1/2 tsp. oregano
- 1 tsp. chili powder
- 1 (15 oz.) can tomato sauce
- 1 (15 1/2 oz.) can kidney beans, drained
- 1 (12 oz.) can whole kernel corn, undrained
- 2 c. slightly broken tortilla chips
- 1 c. shredded cheese
- In large skillet, brown beef; add onion and green pepper. Cook and drain well.
- Stir in sugar, oregano, chili powder, kidney beans, tomato sauce and corn.
- Simmer 20 minutes, stirring occasionally, until most of moisture is absorbed.
- Sprinkle tortilla chips evenly over meat mixture; top with cheese.
- Cover and simmer 3 or 4 minutes or until cheese is melted.
- Serve immediately.
- Serves 6.
