Spring Pea Dip with artichokes & mint
- 2 cups fresh shelled peas, blanched (Or 2 cups frozen peas thawed )
- 1/2 cup drained marinated artichoke hearts, oil reserved
- 1/4 cup crumbled feta cheese
- 3 Tablespoons chopped fresh mint
- 3 Tablespoons fresh lemon juice
- 1 Tablespoon olive oil
- tahini
- 1 tsp. minced garlic
- Salt and pepper to taste
- In a food processer add the peas, artichokes hearts, 1 teaspoon saved oil from artichokes,feta cheese,mint,lemon juice olive oil or tahini and the garlic.
- Process until chunky and season with salt and pepper to taste.
- Cover and chill before serving.
