Thai Noodle Stir-Fry

  1. Place noodles in a large bowl and cover with boiling water.
  2. Separate noodles with a fork.
  3. Drain.
  4. Heat oil in a wok or frypan and saute capsicum and garlic until soft.
  5. Stir through noodles and sauces.
  6. Simmer until ingredients are heated through.
  7. Add bok choy and stir-fry until it wilts.
  8. Serve immediately.
