Fruit mince pies
- 1 1/2 cup plain flour
- 2 tbsp custard powder
- 1/4 cup icing sugar
- 125 grams cold butter,chopped
- 1 egg yolk
- 2 tbsp cold water
- 2 jars of store brought fruit mince, or you can make your own
- Put in food processor flour,custard powder,icing sugar and butter.process until crumbly.
- Add egg yolk and water and blitz to make ingredients just cling together.
- Tip on bench and knead dough lightly,then wrap in plastic and refrigerate for 30 mins(I roll mine first before I put in refrigerator)
- After 30 mins roll pastry between 2 sheets of baking paper to about 3mm thickness
- Using a round pastry cutter,cut out about 24 rounds of pastry from dough.
- Grease two 12 hole patty pans
- Place rounds into greased patty pans
- Place fruit mince in pastry cases and top with any left over rounds of pastry or make stars out of left over pastry.
- Bake in moderate oven around 180 degress celsius for about 15-20 mins, until pastry has lighly browned.
- Remove from oven let stand in pan for 10 mins,then remove from pan and place on wire rack to cool completely.
- When cool sift icing sugar over top of pies.
