Celery Tonic

  1. In a small saucepan, combine sugar and 1/2 cup water over low heat, stirring often, just until sugar is dissolved.
  2. Let cool and refrigerate until ready to serve.
  3. In another small saucepan, heat vodka and celery seeds over low heat.
  4. Ignite vodka with a long match or lighter.
  5. Simmer until flames subside, about 5 minutes.
  6. Strain into a container.
  7. For each serving, add about 1 tablespoon celery infusion and 2 tablespoons sugar syrup to a tall glass with ice.
  8. Fill with seltzer, stir and garnish with a lemon slice.
