Beef Gyro (Sandwich) Recipe

  1. Brown grnd beef and lamb along with 1 1/2 teaspoon salt, basil, oregano and pepper.
  2. Break up meat with a fork as it cooks.
  3. Keep hot.
  4. Wash cucumber, score rind with a fork, then slice thinly.
  5. In a medium saucepan combine cucumber and onion slices with water.
  6. Bring to a boil, cover and simmer 10 min or possibly till soft.
  7. Drain and place in a bowl.
  8. Add in yogurt, vinegar, parsley and remaining 1 teaspoon salt.
  9. Mix till vegetables are proportionately coated.
  10. Cut each tomato into 4 thick slices.
  11. To assemble sandwiches: Split each roll halfway through, then cut across top to remove half of top.
  12. Press soft insides to make room for filling.
  13. Make a layer of meat mix, cover with a tomato slice, then top with cucumber mix.
  14. To serve, replace top crust halves.
  15. Serves 8.
  16. Mix is equally good served in pita bread.
