Beef Gyro (Sandwich) Recipe
- 3/4 pound grnd beef
- 3/4 pound grnd lamb
- 2 1/2 teaspoon salt
- 2 teaspoon dry basil leaves
- 1/2 teaspoon dry oregano leaves
- 1/2 teaspoon pepper
- 1 cucumber
- 1 3/4 c. sliced onions
- 1/4 c. water
- 1 c. yogurt
- 1/3 c. vinegar
- 1/4 c. minced parsley
- 2 lg. tomatoes
- 8 round hard rolls (5 inch)
- Brown grnd beef and lamb along with 1 1/2 teaspoon salt, basil, oregano and pepper.
- Break up meat with a fork as it cooks.
- Keep hot.
- Wash cucumber, score rind with a fork, then slice thinly.
- In a medium saucepan combine cucumber and onion slices with water.
- Bring to a boil, cover and simmer 10 min or possibly till soft.
- Drain and place in a bowl.
- Add in yogurt, vinegar, parsley and remaining 1 teaspoon salt.
- Mix till vegetables are proportionately coated.
- Cut each tomato into 4 thick slices.
- To assemble sandwiches: Split each roll halfway through, then cut across top to remove half of top.
- Press soft insides to make room for filling.
- Make a layer of meat mix, cover with a tomato slice, then top with cucumber mix.
- To serve, replace top crust halves.
- Serves 8.
- Mix is equally good served in pita bread.
