Chicken Stuffed Tomatoes

  1. Saute chicken in butter until tender (about 5 minutes).
  2. Cut thin slice from tops of tomatoes.
  3. Scoop out pulp, leaving shells intact.
  4. Dice tomato tops and pulp; drain.
  5. Combine all ingredients except tomato shells.
  6. Mix well.
  7. Spoon mixture into shells.
  8. Serve on lettuce garnished with avocado wedges and ripe olives if desired.
  9. Makes 4 servings.
