Chicken Stuffed Tomatoes
- 1 whole chicken breast, deboned, skinned and diced
- 1 Tbsp. butter or margarine
- 4 large, firm ripe tomatoes
- 3/4 c. regular wheat germ
- 1/3 c. chopped green onion
- 1/2 c. chopped green pepper
- 3/4 tsp. curry powder
- 1/2 tsp. thyme leaves
- 1/2 tsp. salt
- 1/8 tsp. pepper
- avocado wedges
- ripe olives
- Saute chicken in butter until tender (about 5 minutes).
- Cut thin slice from tops of tomatoes.
- Scoop out pulp, leaving shells intact.
- Dice tomato tops and pulp; drain.
- Combine all ingredients except tomato shells.
- Mix well.
- Spoon mixture into shells.
- Serve on lettuce garnished with avocado wedges and ripe olives if desired.
- Makes 4 servings.
