Left over Vegetable Soup
- 8 cups water
- 3 carrots, diced
- 3 broccoli stems, diced (yes the stems)
- 4 stalks celery, diced
- 6 spring onions, chopped (including white and green parts)
- 1 tablespoon sage
- 1 tablespoon garlic salt (more to taste)
- 1 fennel, frawn
- salt and pepper
- Bring 8 cups water to boil.
- Add all ingredients, return to boil, reduce heat, simmer and let simmer uncovered for 30-40 minutes.
- Season to taste.
