Healthy Carrot Cake Recipe
- 1 1/2 c. whole wheat flour
- 1 1/2 c. unbleached flour
- 1/2 c. brown sugar
- 2 1/2 teaspoon baking soda
- 1 tbsp. cinnamon
- 2 c. shredded carrots
- 1 c. crushed pineapple, undrained (juice)
- 1 c. honey
- 1/2 c. saffron oil
- 4 egg white
- 1 tbsp. vanilla
- 1/3 c. walnuts, optional
- Mix all ingredients.
- Beat 2 min on high.
- Pour into 9 x 13 inch pan coated with spray.
- Bake at 350 degrees for 40-50 min.
- Done when pick comes out clean.
- Cold 30 min.
