Homemade Chicken Patties

  1. Combine chicken and crackers in large bowl.
  2. Whisk together remaining ingredients in smaller bowl.
  3. Pour wet ingredients into dry and stir well until combined.
  4. Cover with a dish towel and let sit for 5 minutes.
  5. Form into 5-7 patties.
  6. Can freeze at this point and cook later.
  7. To cook, heat 2 Tbsp.
  8. of oil in large skillet over med high heat.
  9. Add patties and lower heat to med.
  10. Cook until well browned on each side.
  11. To cook from frozen just increase cooking time.
  12. Remove from heat.
  13. Serve on their own or on buns with lettuce, tomato, cheese, mayo, etc.
