Sweet and Spicy Veggies
- 1 yellow bell pepper; large dice
- 6 jalapenos; 1/3 inch slices; some seeds left intact
- 1 small bag of tiny baby carrots
- 1/2 stalk asparagus; trimmed & cut in half
- 1 yellow or red onion; large dice
- 1 bunch green onion; sliced 1/3 inch thick on the bias
- 2 clove garlic; minced
- 2 tbsp onion powder
- 1 tbsp chile powder
- 1 tbsp cayenne pepper
- 1 tbsp lemon peel seasoning
- 1 tbsp orange peel seasoning
- 1 tbsp paprika
- 1 zest of one lemon for garnish
- 1 salt and pepper
- Heat oil in a large saute pan.
- Add veggies, but not garlic.
- Season.
- Toss.
- Saute approximately 8-10 minutes or until veggies are caramelized and tender.
- Add minced garlic approximately 2 minutes before veggies are done.
- Variations; Corn, mustard, honey, vinegar, pesto, roasted red pepper sauce
