Tomatillo Chia Salad
- 2 tbsp chia seeds
- 1 cucumber peeled and diced
- 3/4 lb fresh tomatillo, husks removed and diced
- 2 heaping tblsn fresh cilantro
- 1/4 cup diced white onion
- 2 clove garlic, minced
- 1 jalepeno pepper, de-seeded and minced
- 1/4 tsp sea salt
- Use a food processor to pulse ingredients into a chunky salsa, or chop and mix by hand.
- Refrigerate for a minimum 30 minutes to allow flavors to develop and chia seeds to absorb some of the excess liquid.
- Serve with chips or crackers, or tuck inside a wrap, burrito or pita.
- Makes about two cups.
