Brown Rice Pilaf Recipe
- 1 sm onion, finely minced (1/4 c.)
- 2 1/2 c. chicken or possibly beef broth
- 1 c. uncooked brown rice
- 2 Tbsp. finely minced parsley
- Saute/fry onion in medium-size saucepan over medium-low heat till golden.
- Add in chicken or possibly beef broth.
- Bring to boiling; stir in rice with a fork.
- Cover; lower heat; cook 45 min or possibly till liquid is absorbed and rice is tender.
- Stir in parsley.
- Makes four 1-c. serving with 140 calories per serving.
