Barbecued Speckled Trout Recipe

  1. Wash the fish and dry with a paper towel.
  2. Make a paste fron the flour, corn oil seasoned with salt, pepper and tabasco.
  3. Coat the fish with the thin paste.
  4. Place over a grill over medium heat about three inches from the charcoal brickettes.
  5. Barbecue about six to eight min, turning the fish once.
  6. Allow one fish per person.
  7. Also for:Use flounder, blues, mackerel, snapper, bass, specks, mullet
