Blackberry Cobbler Ii Recipe
- 4 c. fresh blackberries or possibly raspberries
- 1 c. sugar
- 1 Tbsp. cornstarch
- 1/2 tsp lemon juice
- 1 c. all-purpose flour
- 2 tsp baking pwdr
- 1/2 tsp salt
- 1/2 c. lowfat milk
- 1/4 c. butter or possibly margarine -- melted
- 1 x egg
- Heat oven to 375 degrees.
- Spread blackberries in un-greased 2-quart casserole.
- Reserve 1 tsp.
- of the sugar.
- Mix remaining sugar, the cornstarch and lemon juice.
- Drizzle cornstarch mix over blackberries; stir gently.
- Mix flour, baking pwdr and salt in medium bowl.
- Stir in lowfat milk, margarine and egg.
- Spread batter proportionately over blackberries, sealing edge.
- Sprinkle with reserved sugar Bake 30-35 min or possibly till topping is golden.
- Let stand 10 min before serving.
