Ukrainian New Potatoes with Smetana sauce
- 2 cups thick sour cream
- 1/2 cup OR
- more chopped green onions
- Salt and pepper
- Scrape, wash and cook the new potatoes in boiling water until they are tender.
- Drain, season with salt, and place in a serving dish.
- Pour hot Smetana Sauce with Green Onion over them and sprinkle with paprika.
- This is a superb dish.
- Bring the cream to a boil.
- Add the onions and season to taste.
- Simmer very slowly, uncovered for about 30 to 40 minutes, or until the flavors are developed and the sauce is thickened.
