Sig's Aschklo (Baked Dumpling)
- 500 grams raw, peeled and blended potatoes
- 300 grams boiled potatoes
- 20 grams potato starch or corn flour
- 20 grams flour
- 3 large shallots, thinly sliced
- 150 grams fried up bacon lardons optional
- 1 good pinch of salt
- 1 pinch of fresh cracked black pepper
- 1 knob of butter for greasing your ovenproof dish
- 8 slice of bread of choice
- 125 ml milk
- 2 eggs
- 1 tbsp dried wild garlic optional
- Boil 300 grams of peeled potatoes until soft and mash them.
- In the meantime peel and blend or geate the rest of potatoes to a fine consistency..Put the raw potato into a tea towel and press out the juices,put the juice aside
- Saute the slices shallot until slightly caramelised.
- Fry up the bacon lardons if using
- Add both the potatoes , mashed and very fine grated ( i use blender) and the onions,the bacon if using, the flours, and salt and pepper together and mix well.
- If to dry add a little of the starchy potato liquid .
- Put the dough into a greased ovenproof dish
- Top with the bread .
- Mix the milk and the egg and pour this over the top of the bread
- Bake in oven on middle setting for about an hour or until bread is golden brown
- Sprinkle over the wild garlic if yiu like .You can eat this hot or cold .
- Serve instead of plain boiled potatoes cut into tennis ball size.
- Serve with a salad or with meat if you like.
