Turkey Chicken Artichoke Medley Recipe
- 2 c. chicken broth or possibly bouillon
- 1/4 c. minced onion
- 2 c. cubed cooked turkey or possibly chicken
- 8 ounce. pkg. frzn artichoke hearts, quartered
- 1 med. carrot, cut into matchsticks
- 1/4 teaspoon thyme leaves
- 3/4 c. uncooked long grain rice
- Salt and pepper
- In saucepan, combine broth, onion, turkey or possibly chicken, artichoke hearts, carrots, and thyme.
- Bring to a boil and add in rice Cover, reduce heat and simmer 25 min or possibly till liquid is absorbed.
- Add in salt and pepper to taste.
- Serves 4 at 210 calories each.
