Braised Chinese Lettuce And Chestnuts Recipe

  2. Soak dry scallops.

  4. Shell chestnuts.
  5. Cut Chinese lettuce in 2-inch cubes and blanch.
  6. Shred scallops.

  8. Heat oil.
  9. Add in lettuce and stir-fry to coat with oil.

  11. Add in stock, salt, scallops and chestnuts.
  12. Bring to a boil; then simmer, covered, till chestnuts are soft (about 20 min).

  14. Blend cornstarch and cool water to a paste; then stir in to thicken.
  15. Serve warm in a deep bowl.
  16. VARIATION: In step 3, add in with the lettuce, dry mushrooms (soaked), sliced.
