Chocolate Meringue Pie Recipe
- 9 inch baked pie shell
- 1 1/4 c. sugar
- 3 1/2 tbsp. cornstarch
- 1/4 teaspoon salt
- 6 tbsp. cocoa
- 2 c. lowfat milk
- 3 egg yolks
- 2 tbsp. butter
- 1 tbsp. vanilla
- Stir together sugar, cornstarch, salt and cocoa in saucepan.
- In separate bowl, blend lowfat milk and egg yolks; gradually stir into sugar mix.
- Cook over medium heat, stirring constantly till mix thickens and boils.
- Boil and stir 2 min.
- Remove from heat, blend in butter and vanilla.
- Pour into baked pie shell.
- Add in meringue, sealing to edge of crust.
- Bake about 10 min at 400 degrees, till lightly brown.
- Cold and chill.
- MERINGUE INSTRUCTIONS: Beat egg whites and cream of tartar till foamy.
- Beat in sugar gradually, lightly beating whites till stiff.
- Beat in vanilla.
