Orange Walnut Cake with Cinnamon and Cream Glaze
- 1 pkg. (18.5 oz.) yellow cake mix (without pudding)
- 3 eggs
- 1/3 cup oil
- 1 cup sour cream
- 1/3 cup water
- 6 tbsp. ground orange (1 medium) Use fruit, juice and peel
- 4 tbsp. cinnamon sugar
- 3/4 cup chopped walnuts
- 1/2 cup sifted powdered sugar
- 1 tbsp. cream
- 1/4 tsp. vanilla
- FOR THE CAKE: Beat together first 6 ingredients, at medium speed, for 4 minutes.
- Spread half the batter into a lightly greased 10-inch tube pan.
- Sprinkle 3 Tablespoons cinnamon sugar and 1/4 cup chopped walnuts over the batter.
- Cover with remaining batter.
- Sprinkle top with remaining cinnamon sugar and chopped walnuts.
- (Pat walnuts lightly into the batter.)
- Bake in a 350 F. oven for about 50 minutes, or until a cake tester, inserted in center, comes out clean.
- Allow to cool in pan.
- When cool remove from pan and drizzle top with Vanilla Cream Glaze.
- Yields 10 servings.
- FOR THE GLAZE: Stir together all the ingredients until blended.
