Lemony Blue Cheese Dressing

  1. In a small bowl, combine the blue cheese crumbles, minced garlic, parsley, and chives.
  2. Use a fork to mix well and break up the cheese.
  3. Add lemon zest and lemon juice.
  4. Add all remaining ingredients and stir well.
  5. The cheese makes this sauce prone to saltiness; add salt sparingly and taste often.
  6. Pepper, however, is just dandyadd as much as you can stand!
  7. Serve over a salad, or as an accompaniment to spicy chicken wings.
