Marinated Chicken Fajitas (Vegetarian Friendly)

  1. Marinate chicken breast in 1/2 cup Italian dressing overnight.
  2. AND/OR Marinate Quorn cutlets in 1/2 cup Italian dressing for 3 hours.
  3. Discard marinade.
  4. Grill chicken breast and/or Quorn cutlets.
  5. Slice into strips.
  6. Saute bell pepper, garlic and onion in olive oil until soft.
  7. Season with chili powder, cumin, red pepper flake, salt and pepper.
  8. To Assemble: Sprinkle cheddar cheese down the center of each tortilla.
  9. Top with sliced chicken pieces and pepper mixture.
  10. Roll or fold and enjoy!
