Southwestern Hash

  1. Heat a large skillet over medium heat.
  2. Drizzle with 1 teaspoon olive oil.
  3. Add diced sausage and cook until browned.
  4. Add onion and bell pepper.
  5. Cook until veggies have softened, about 3 minutes.
  6. Remove sausage mixture to a bowl and set aside.
  7. Add remaining 1 teaspoon olive oil.
  8. Add potatoes in an even layer, sprinkle with salt and pepper.
  9. Cook potatoes for 8 minutes or until the bottom has begun to crisp up.
  10. Stir in sausage mixture.
  11. Make 5 wells in potatoes and add eggs into each well.
  12. Cover and cook for 5-8 minutes or until eggs have completely set.
  13. Remove from heat and sprinkle with tomatoes, avocadoes and cilantro.
