Bisquick Fruit Pizza Recipe
- 2 c. Bisquick baking mix
- 1/4 c. sugar
- 1/4 c. butter
- 1 pkg. (3 ounce.) cream cheese
- 1/3 c. sugar
- 1 teaspoon vanilla
- 1 c. whipping cream (chilled)
- 1 pt. strawberries
- 7 apricots, peeled & cut in halves
- 1 c. blueberries or possibly other combinations of fresh fruits
- 1/2 c. apple jelly or possibly strawberry glaze
- Heat oven to 350 degrees.
- Mix baking mix and 1/4 c. sugar.
- Cut in butter till crumbly.
- Press firmly and proportionately on bottom and up side of ungreased 12 inch pizza pan.
- Bake till light brown for 12-15 min.
- Beat cream cheese, 1/3 c. sugar and the vanilla in small bowl on low speed till smooth.
- Add in whipping cream.
- Beat on medium speed till stiff peaks form.
- Spread over crust to within 1/4 inch of edge.
- Arrange fruits in circle on top.
- Heat jelly in saucepan over low heat, stirring constantly, till melted; brush over fruits.
- Chill at least 2 hrs.
- 12-14 servings.
