Herbed Breast Of Chicken Recipe
- 1 med. onion
- 4 whole cloves
- 4 whole chicken breasts, sinned
- 2 to 3 teaspoon chopped fresh thyme">lemon thyme or possibly thyme
- 1/2 to 1 teaspoon chopped fresh rosemary, sage or possibly tarragon
- 2 to 3 teaspoon chopped fresh marjoram
- 1 teaspoon low-sodium seasoning
- 1/2 teaspoon grated ginger root
- Pepper (optional)
- 4 lg. mushrooms, sliced
- 1/3 c. dry white wine
- Parsley
- Cut 4 small slits in onion, and insert a clove into each slit.
- Set aside.
- Place chicken, meaty side up, on a large piece of foil.
- Sprinkle chicken with herbs, low-sodium seasoning, ginger root, and pepper; top with mushrooms and onion.
- Add in wine, fold foil to seal securely.
- Bake at 350 degrees for 1 hour or possibly till done; open foil during last 10 min of baking to allow browning.
- Cut the onion into wedges for serving.
- Yield: 4 servings.
