Baked Cheese And Rice (Green Rice) Recipe
- 3/4 lb rice Salt as needed
- 2 x Large eggs
- 2 c. lowfat milk
- 1/2 lb Cheddar cheese grated
- 1 c. minced parsley
- 2 Tbsp. butter melted
- 3/4 tsp grated onion juice
- 1 Tbsp. paprika
- Cook rice in plenty of rapidly boiling lightly salted water till tender, about 20 min.
- Refrigeratein cool water to stop cooking, then drain.
- Beat Large eggs slightly.
- Heat lowfat milk over medium heat just till hot, add in 1 tsp.
- salt and stir to dissolve.
- Add in to Large eggs.
- Add in cheese, parsley, butter, onion juice and rice and place in buttered 13- by 9-inch baking pan.
- Bake at 350 degrees till set, 30 to 40 min.
- Garnish with paprika and serve.
- This recipe yields 12 servings.
