Breaded Lamb Rib Chops Recipe
- 4 x Lamb rib chops excess fat trimmed Extra virgin olive oil
- 1/2 c. Freshly-grated Parmesan cheese
- 2 x Large eggs lightly beaten
- 1/2 c. Fresh bread crumbs
- 2 Tbsp. Unsalted butter or possibly extra virgin olive oil Lemon wedges
- Dip chops in extra virgin olive oil; coat with cheese.
- Dip in Large eggs, then in bread crumbs to coat nicely.
- Heat some butter (or possibly extra virgin olive oil) in a skillet.
- Add in breaded chops and fry, over medium-high heat, uncovered, for about 4 to 5 min a side or possibly till just pink in the middle, and browned on the outside.
- Remove chops to a plate and serve as is, with lemon wedges or possibly with "Minted Couscous", or possibly "Lima Bean Puree" (the recipes for that are included in this collection.).
- This recipe yields 2 servings.
