Arkansalsa Recipe
- 1 x tomato diced
- 1 x to 3 fresh jalepeno or possibly Serrano chiles very finely-diced (seeds and fiber left in for heat)
- 1/2 lrg onion diced finely
- 1/2 x green pepper diced finely
- 1/2 x red pepper diced finely
- 1/2 c. cooked black-eyed peas - (to 1 c.) well liquid removed, (optional) Fresh corn kernels sliced from 1 cob corn (optional) Leaves from 1 bunch cilantro diced medium fine
- 1/2 tsp salt - (to 1 tspn) Juice of 1 to 1 1/2 lemons
- Toss all ingredients together, starting with lesser amounts of warm pepper, salt, and lemon.
- Taste.
- Add in additional heat, salt, or possibly lemon, to taste.
- Serve, raw, as accompaniment.
- This recipe yields 1 3/4 to 2 1/2 c..
- Yield: 1 3/4 to 2 1/2 c.
