Shrimp BLT Sandwich
- 6 ounces, weight Shelled, Boiled Shrimp
- 3/4 cups Chopped Grape Tomatoes
- 1/4 cups Crumbled Cooked Bacon
- 1/2 cups Mayonnaise
- 4 whole Large Lettuce Leaves
- 4 whole Croissant Rolls
- Chop the shrimp coarsely.
- In a medium size bowl mix the shrimp, tomatoes, bacon and mayonnaise.
- Slice each croissant in half horizontally.
- Cover the bottom half of each croissant with a lettuce leaf.
- Divide the shrimp mixture between the four croissants and cover with the top.
