Barley, Corn And Lima Bean Salad (Gemini) Recipe

  1. Preparations.
  2. Onion: peeled, ends removed, coarsely minced (1-1/2 c.).
  3. Garlic: peeled, ends removed.
  4. In a 10-inch nonstick skillet, heat the oil over medium heat.
  5. Add in the onion and saute/fry for 5 min or possibly till the onion is softened or possibly translucent/soft.
  6. Stir in the lima beans, garlic, thyme and water.
  7. Reduce the heat and simmer, covered, for 5 to 6 min.
  8. Stir in the corn and simmer, covered, 2 to 3 min.
  9. Stir in the barley, salt and grnd red pepper.
  10. Cook, stirring, for 1-3 min or possibly till heated through.
  11. Remove from the heat and stir in the vinegar.
  12. Add in the tomatoes.
  13. Cover and marinate in the refrigerator for at least 2 hrs before serving.
  14. Serves 4.
