Date And Walnut Cake
- 225 grams dates
- 1 cup boiling water
- 1/2 tsp cooking soda
- 115 grams butter
- 115 grams granulated sugar
- 2 eggs
- 85 grams flour
- 1/4 tsp baking powder
- 55 grams chopped walnuts
- Present heat oven at 80C for 40 minutes.
- Stone dates.
- Chop it into small pieces.
- Soak the chopped dates in sufficient boiling water to cover the dates.
- Add 1/2 teaspoon of cooking soda.
- Cover and let it stand.
- Cream butter and sugar till the sugar has completely melted.
- Add an egg at a time and cream.
- I used a hand beater.
- Add the flour and baking powder to the butter egg mix.
- Once the above are well combined, mix in the dates with a fork.
- Add the walnuts.
- Pour batter into a greased and dusted tin.
- Bake for 45 minutes or more till a toothpick inserted comes out dry at 350F or 180 Celsius.
