Chaliapin Pork Steak

  1. Cut along the grain of the pork and lightly pound with the back of a knife, then flatten to about 5 mm thick with a wooden pestle.
  2. Grate the onions and garlic and put into a dish.
  3. Add the pork and marinate for about 30 minutes.
  4. Remove the pork and roughly wipe away the excess onions and garlic.
  5. Sprinkle on a bit of salt and pepper (Set aside excess onions and garlic).
  6. Put the butter and vegetable oil in a frying pan and turn the heat to medium.
  7. Cook both sides of the pork.
  8. Once the pork has cooked through, add the red wine and the onions and garlic you set aside in Step 3.
  9. Bring to a boil.
  10. Season with salt and pepper and serve.
