Polynesian Chicken Thighs with Mango Salsa

  1. Preheat oven to 400 degrees F.
  2. Prepare chicken thighs by seasoning with pepper, garlic powder and salt on both sides.
  3. Set aside.
  4. In a large skillet, heat oil, brown sugar and soy sauce over medium high heat.
  5. Once hot, add the chicken into the pan.
  6. Cook chicken thighs in the oil mixture for four to five minutes per side.
  7. Place browned chicken thighs into a 9x13 baker and place in a 400 degrees F oven for 30 minutes or until thighs hit an internal temperature of 165 degrees F. They will be dark brown with a crisp skin.
  8. While the chicken is baking, place all salsa ingredients into a small bowl and mix to combine.
  9. Serve chicken over a platter of rice and top with mango salsa.
