Polynesian Chicken Thighs with Mango Salsa
- 8 whole Chicken Thighs
- 1 Tablespoon Fresh Ground Black Pepper
- 2 teaspoons Garlic Powder
- 1 teaspoon Kosher Salt
- 1 Tablespoon Olive Oil
- 2 Tablespoons Brown Sugar
- 2 Tablespoons Soy Sauce
- 1 whole Large Mango, Diced
- 1/2 whole Large Sweet Onion, Diced
- 1 Tablespoon Cilantro, Chopped
- 1 whole Jalapeno, Seeded And Diced
- Preheat oven to 400 degrees F.
- Prepare chicken thighs by seasoning with pepper, garlic powder and salt on both sides.
- Set aside.
- In a large skillet, heat oil, brown sugar and soy sauce over medium high heat.
- Once hot, add the chicken into the pan.
- Cook chicken thighs in the oil mixture for four to five minutes per side.
- Place browned chicken thighs into a 9x13 baker and place in a 400 degrees F oven for 30 minutes or until thighs hit an internal temperature of 165 degrees F. They will be dark brown with a crisp skin.
- While the chicken is baking, place all salsa ingredients into a small bowl and mix to combine.
- Serve chicken over a platter of rice and top with mango salsa.
