Maple-Pecan Muffins
- 2 cups maple-pecan whole grain cereal flakes
- 1-1/2 cups flour
- 1 Tbsp. CALUMET Baking Powder
- 3/4 cup milk
- 1/2 cup chunky applesauce
- 1/4 cup maple-flavored or pancake syrup
- 1/4 cup (1/2 stick) butter, melted
- 1 egg
- 2 Tbsp. finely chopped PLANTERS Pecans
- Preheat oven to 400 degrees F. Grease 12 medium muffin cups or line with paper liners; set aside.
- Combine cereal, flour and baking powder in large bowl.
- Beat egg, milk, applesauce, syrup and butter in medium bowl with wire whisk until well blended.
- Add to flour mixture; stir just until moistened.
- Spoon evenly into prepared muffin cups, filling each about two-thirds full.
- Sprinkle with pecans.
- Bake 20 min.
- or until muffins are golden brown and wooden toothpick inserted in centers comes out clean.
- Cool 5 min.
- before removing from pan.
- Serve warm.
