Scallops With Cranberry Grapefruit Sauce
- 2 large red grapefruits, peeled and sectioned
- 1 12 cups cranberries
- 12 cup sugar
- 34 cup water
- 1 tablespoon olive oil
- 1 lb sea scallops
- pepper
- For the sauce: coarsely chop grapefruit and discard the seeds.
- In a medium stainless steel pot combine grapefruit, cranberries, sugar and water over high heat.
- Bring to boiling, cook and stir until sugar dissolves and cranberries start to break down.
- Reduce heat and simmer 20 minutes, set aside until serving time.
- When the sauce is nearly done, in a large nonstick skillet heat oil over medium high heat.
- Pat scallops dry with paper towels and season with pepper to taste.
- Working in batches, place scallops in pan (do not overcrowd) ; cook 2-3 minutes per side or until both side are browned.
- Transfer to a platter, repeat with remaining scallops.
- Serve with sauce.
