Ricotta Pancakes
- 1 cup flour
- 2 teaspoons baking powder
- 12 teaspoon baking soda
- 14 teaspoon salt
- 1 tablespoon sugar
- 1 cup ricotta cheese
- 1 cup low-fat milk
- Mix all of the dry ingredients (flour, baking powder, baking soda, salt and sugar) together in a medium bowl.
- Add the ricotta and milk and stir until mixed.
- It will be lumpy.
- Let the batter rest about 10 minutes at room temperature.
- Cook on a griddle or large pan over medium-high heat until golden brown on the bottom.
- Flip pancake over and continue to cook until golden brown on bottom side and cooked through.
- Serve with maple syrup, powdered sugar, or any other sweet topping (such as fruit).
