Pork and Garlic Shoot Stir-fry

  1. Slice the pork into bite-sized pieces, and place them in a bowl.
  2. Add the A list ingredients, rub them into the pork, and let it marinate for 10 minutes.
  3. Slice the garlic shoots lengthwise into sixths, and blanch in boiling water.
  4. Combine the B list ingredients and set aside.
  5. Heat some oil in a frying pan, and fry the finely chopped leek and ginger.
  6. Add the pork and fry over high heat.
  7. When the meat has whitened, add the garlic shoots and stir-fry briskly.
  8. Add the combined B list ingredients to the frying pan, and stir-fry quickly over high heat.
  9. Transfer to serving plates and enjoy.
