Asian Lettuce Wraps
- 1 tablespoon reduced-fat crunchy peanut butter
- 1 teaspoon reduced-fat crunchy peanut butter
- 1 12 teaspoons honey
- 1 12 teaspoons cider vinegar
- 1 12 teaspoons low sodium soy sauce
- 14 teaspoon curry powder
- 18 teaspoon ground red pepper
- 1 (16 ounce) package coleslaw mix
- 4 leaves iceberg lettuce (Chinese) or 4 leaves napa cabbage (Chinese)
- 4 thin slices deli turkey
- Combine first 6 ingredients in a medium bowl; stir well.
- Add coleslaw; toss to coat.
- Place one slice of turkey on each lettuce leaf; top with 1/2 cup coleslaw mixture.
- Roll up; secure each end with a wooden pick.
- Cut each wrap in half diagonally.
- Yield: 4 servings (serving size: 2 halves).
