Mexican Casserole
- 1 medium tomato
- 1 lb. ground beef
- 1 lb. sausage
- 1 small onion
- 1/2 c. chopped bell pepper
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 1/2 tsp. chili powder
- 1/2 tsp. oregano
- 1 (17 oz.) can kernel corn, drained
- 2 pkg. (8 1/2 oz.) Jiffy corn bread mix
- 1 (12 oz.) pkg. Mozzarella cheese
- 1 egg
- 1/3 c. milk
- Preheat oven to 400u0b0.
- In skillet, cook ground beef, sausage, salt, black pepper, chili powder and oregano.
- When halfway cooked, add chopped tomato, onion, bell pepper and corn until cooked all the way.
- Drain grease.
- In 13 x 9 x 2-inch baking pan, place meat mixture evenly in bottom of pan.
- Spread Mozzarella on top of meat.
- In small bowl, make Jiffy corn bread mix according to directions.
- Pour corn bread mix evenly on top of meat and cheese mixture.
- Bake in oven at 400u0b0 until corn bread is golden brown.
- Serves 12.
