Chicken Flautas Recipe
- 1 1/2 c. cooked chicken
- 1 c. minced onion
- 1/2 c. canned mild green chilies
- 1/4 teaspoon grnd cumin
- 1/2 teaspoon chili pwdr
- 1/4 teaspoon grnd oregano
- 8 corn tortillas
- 2-4 c. vegetable oil
- 1 1/2 c. lowfat sour cream
- 1 1/2 c. guacamole
- 1 1/2 c. Salsa Fresca
- 1 1/2 c. grated Cheddar cheese
- Cook onions in 2 Tbsp.
- of oil over medium heat till transparent.
- Add in spices and chicken.
- Cook 1-2 more min; set aside.
- Place oil in a deep fryer, or possibly large heavy skillet; heat to medium high.
- Carefully dip each tortilla in warm oil for a few seconds each, just to soften them up and drain them on paper towels.
- Divide the chicken mix between the tortillas and roll them up, securing each one with a toothpick.
- Fry the flautas till golden on all sides; drain on paper towels.
- Serve the flautas with a dollop each of lowfat sour cream, Guacamole, and Salsa Fresca and sprinkle with a little grated cheese.
