Chicken Flautas Recipe

  1. Cook onions in 2 Tbsp.
  2. of oil over medium heat till transparent.
  3. Add in spices and chicken.
  4. Cook 1-2 more min; set aside.
  5. Place oil in a deep fryer, or possibly large heavy skillet; heat to medium high.
  6. Carefully dip each tortilla in warm oil for a few seconds each, just to soften them up and drain them on paper towels.
  7. Divide the chicken mix between the tortillas and roll them up, securing each one with a toothpick.
  8. Fry the flautas till golden on all sides; drain on paper towels.
  9. Serve the flautas with a dollop each of lowfat sour cream, Guacamole, and Salsa Fresca and sprinkle with a little grated cheese.
