Cauliflower Fried Rice
- 1 head Fresh Cauliflower, Cored
- 2 Tablespoons Coconut Oil, Melted
- 1 pound Frozen Peas And Carrots Combination (cubed)
- 1 Tablespoon Tamari Soy Sauce (coconut Aminos If Soy Sensitive)
- 1 dash Sea Salt

- Cut cauliflower into small florets so they will fit into a food processor.
- 2.
- Process the cauliflower in the food processor until it forms small rice-like pieces.
- 3.
- Add the coconut oil into a large pot and heat over medium heat.
- Add the cauliflower rice and let it cook on medium heat.
- Stir regularly to make sure it doesnt burn.
- 4.
- Add the frozen carrots and peas to a pot of water and bring to a boil.
- Boil for about 5-10 minutes.

- Drain the carrots and peas and add them into the cauliflower.
- 6.
- Add the tamari and salt to taste.
- 7.
- Cook for an additional 2-3 minutes and then serve warm.
