Spinach Balls
- 1 (6 ounce) boxstove top stuffing mix for chicken
- 2 (10 ounce) packages frozen chopped spinach
- 23 cup Italian salad dressing (bottled is fine)
- 3 eggs, lightly beaten
- 1 cup parmesan cheese, grated
- 1 cup fresh mushrooms, chopped
- 1 small onion, chopped
- 1 cup hot water
- Mix -- Just add all the ingredients together in a medium size bowl and mix well.
- Then form into 1" or golf ball size appetizers.
- Place on a baking sheet sprayed with pam or a non stick spray or you can line the pan with parchment paper.
- Bake -- Heat the oven to 400 and bake the "balls" for 12-15 minutes until golden brown.
- This will make around 40 balls.
- I usually split the recipe in half, but it depends on the crowd.
- These never last very long.
- I like to serve a creamy parmesan dip on the side.
