Mini Pumpkin Pies

  1. Preheat oven to 425 degrees .
  2. You will need a 4" round cookie cutter.
  3. (I used a large cookie cutter) & a muffin pan.
  4. .
  5. One box of 2 pie crust is enough for 12 mini pies.
  6. Spray your muffin tin with cooking spray.
  7. Cut your circles out of your dough.
  8. Press them in your tin.
  9. Mix pumpkin , sweet condensed milk, eggs, spice in a large bowl until smooth.
  10. Pour into pastry lined muffin cups.
  11. Top with pastry leaf if desired.
  12. I sprinkled some cinnamon on top.
  13. Bake 15 minutes.
  14. Reduce oven temp.
  15. To 350 degrees .
  16. Bake 20-25 minutes longer or until a knife comes out clean Remove to wire rack allow to cool.
  17. Cool completely.
  18. Keep refrigerated.
