Ham & Cheese Meatloaf
- 1-1/2 lb. (675 g) extra-lean ground beef Safeway 1 lb For $3.99 thru 02/09
- 14 Ritz Crackers, coarsely crushed (about 3/4 cup)
- 1 onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1/4 cup chopped fresh parsley
- 1 egg, beaten
- 1 cup Cracker Barrel Shredded Mozza-Cheddar Cheese, divided
- 1/2 cup Kraft BarBQ Sauce, divided
- 4 slices (70 g) deli ham
- Heat oven to 375 degrees F.
- Place first 5 ingredients in large bowl.
- Add half each of the cheese and barbecue sauce; mix well.
- Press half onto bottom of 9x5-inch loaf pan.
- Cover with half the ham, remaining cheese and remaining ham; top with remaining ground beef mixture.
- Shape into loaf.
- Bake 1 hour 5 min.
- or until done (160 degrees F), brushing with remaining barbecue sauce after 50 min.
- Let stand 5 min.
- before slicing.
