Gluten-Free Raspberry Apple Crisp
- 4 cups Green Apples, Cored And Sliced Thin
- 1 Tablespoon Lemon Juice
- 2 Tablespoons Cornstarch
- 3 Tablespoons Organic Sugar
- 1 pint Raspberries
- 1/2 cups Quinoa Flakes
- 1/2 cups Organic Brown Sugar
- 1/4 cups Gluten-free All-purpose Flour
- 1 teaspoon Cinnamon
- 1/4 teaspoons Salt
- 1/2 teaspoons Xanthan Gum (optional)
- 1/4 cups Earth Balance (or Butter) Cut Into Small Cubes
- Preheat oven to 375 degrees F.
- Place sliced apples in a pie plate.
- Add the lemon juice, cornstarch and sugar.
- Mix with your hands.
- Place raspberries on top of apple mixture.
- Now prepare the topping.
- In a medium-sized bowl, place the quinoa flakes, brown sugar, gluten-free flour, cinnamon, salt and xanthan gum (if using).
- Stir the dry ingredients together.
- Now add the butter, and work it in using a pastry cutter or a fork.
- You want the topping to be crumbly.
- Sprinkle the topping over the apple-raspberry mixture, put it into the preheated oven and bake for 35 minutes.
- Serve with ice cream.
