Renees Simplified Caldo Verde
- 1 Onion, Chopped
- 1 pound Sausage, Such As Linguica, Chorizo, Italian
- 1 Tablespoon Olive Oil, Plus More To Serve
- 5 Potatoes, Peeled And Diced (or 2 15-ounce Cans Cannellini Beans, Drained)
- 4 quarts Water Or Chicken Broth
- Salt And Pepper, to taste
- 1 pound Kale, Washed, De-stemmed, And Torn Or Roughly Chopped
- In a heavy soup pot (I use a Dutch oven), saute onions and sausage together with olive oil until onions are translucent and sausage is almost cooked through.
- Add potatoes (or beans) and water or chicken broth.
- Bring to a boil.
- When the potatoes are almost done, season broth with salt and pepper to taste, then add kale.
- Cover and simmer for another 510 minutes, until kale is softened to your liking.
- Ladle into bowls and drizzle with olive oil.
