Renees Simplified Caldo Verde

  1. In a heavy soup pot (I use a Dutch oven), saute onions and sausage together with olive oil until onions are translucent and sausage is almost cooked through.
  2. Add potatoes (or beans) and water or chicken broth.
  3. Bring to a boil.
  4. When the potatoes are almost done, season broth with salt and pepper to taste, then add kale.
  5. Cover and simmer for another 510 minutes, until kale is softened to your liking.
  6. Ladle into bowls and drizzle with olive oil.
