Simple Potato and Kale Soup #5FIX
- 4 cups water
- 4 teaspoons vegetable bouillon (try tomato bouillon with chicken flavor)
- 1 fennel bulb, trimmed and sliced thin
- 1 cup fresh kale, leaves stripped from tough stems and torn into 1-inch pieces (about 4-5 large stems of kale)
- 2 cups Simply Potatoes Diced Potatoes with Onion
- In a large saucepan, combine water, bouillon, fennel, and kale.
- Let simmer until kale is tender, about 10 minutes.
- Add Simply Potatoes Diced Potatoes with Onion and let simmer until potatoes are tender and broth is slightly thickened, another 10 minutes.
