Gardener's Bread

  1. Grate pears to measure 1 1/2 cup.
  2. Combine flour, salt, baking soda, cinnamon, baking powder and ginger.
  3. Beat eggs in separate bowl then gradually beat in sugar and oil.
  4. Add vanilla and lemon peel.
  5. Blend into flour mixture.
  6. Add the pears, carrot, zucchini and nuts and mix well.
  7. Divide mixture into 2 greased loaf pans.
  8. Let stand 5 minutes then bake at 350 for 55 minutes.
